Garlic Parmesan Chicken Meatloaf
Ingredients 🛒
1.5 lbs ground chicken
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese (plus extra for topping)
3 cloves garlic, minced
1 egg
1/4 cup milk
1 tbsp fresh parsley, chopped
1 tsp Italian seasoning
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.
Mix the Meatloaf: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix until just combined.
Shape and Bake: Shape the mixture into a loaf on the prepared baking sheet (or press into the loaf pan). Bake for 35-40 minutes until cooked through and firm.
Add the Cheese: Remove from the oven and sprinkle extra shredded mozzarella over the top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Serve: Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve with your favorite sides.
The only thing I did differently was I made mini ones, so I baked them at 350 for 25 minutes. Then added more mozzarella and parsley and baked another 7 minutes.

Mini Chicken Pot Pies

Pillsbury mini pie crust
Pillsbury biscuits
1 can cream of chicken soup
1 can white meat chicken
1 can peas and carrots
Mix canned ingredients together in a bowl. Add salt and pepper to taste.
Grease a muffin pan and put mini pie crusts in. Fill crusts with filling. Take the biscuits and break them in half (top and bottom). Place biscuits on top of filled pie crusts. Bake at 350 for 13-15 minutes
Garlic Spinach Chicken Alfredo

1 lbs chicken tender
1 jar Alfredo sauce
16 oz. Fresh spinach
4 garlic gloves
4 TBSP olive oil
1 box fettuccine
1/4 cup flour
3 eggs
Put 2 TBSP oil in a sauce pan over medium heat with chopped garlic and spinach. Stir regularly until all spinach is cooked and put to the side. Add 2 TBSP oil to pan. Take chicken tender and dip in egg, flour, egg, and flour. Place in pan and cook both sides evenly. 3-5 minutes per side. Cut chicken into bite size pieces. Boil fettuccine. In a bowl, mix chicken, spinach and Alfredo sauce. Serve over fettuccine pasta.
Easy
Vegetable Pasta Casserole

1 box ruffle pasta
1 can peas and carrots
1 can cream of mushroom soup
3/4 cup shredded mozzarella
Boil pasta. Mix peas, carrots, mushroom soup and 1/2 cup mozzarella. Mix in boiled pasta and put remaining shredded cheese on top. Cover with foil and bake at 350 for 30 minutes.
